Vegan coconut and kiwi overnight oats

Vegan coconut and kiwi overnight oats

Ingredients (for 4-6 ramekins):

  • 1 cup of rolled oats

  • 1/2 cup of unsweetened coconut milk

  • 1/2 cup of plant-based milk (I used soy)

  • 1/2 cup of diced kiwi fruit

  • 2 tablespoons of shredded coconut

  • 2 tablespoons of ground flax

  • 1 tablespoon of maple syrup

  • 1/4 teaspoon of vanilla extract

Instructions:

  1. In a mixing bowl, combine the rolled oats, coconut milk, maple syrup, and vanilla extract. Stir until well combined.

  2. Add in the diced kiwi and stir gently to combine.

  3. Transfer the mixture into a mason jar or airtight container. Cover and refrigerate overnight.

  4. In the morning, line the walls of your ramekin with sliced kiwi and top the oats with shredded coconut and additional diced kiwi, if desired.
