Roasted radishes, sweet potatoes and whipped tofu
Radishes. These little root vegetables often get overlooked, relegated to just being salad garnishes or crunchy additions to veggie trays. But have you ever considered roasting them? Yes, you read that right — roasting radishes! Prepare to be amazed as the radishes undergo a magical transformation in the oven. With a bit of heat, the radishes get a soft and subtly sweet flavor without being mushy, making them the perfect addition to a roasting tray! Today, we're taking things up a notch by pairing our roasted radishes with sweet potatoes and serving them atop a velvety spread of whipped tofu.

Roasted radishes, sweet potatoes and whipped tofu
Ingredients - Roasted radishes:
1 big bunch of radishes, halved (around 250 grams)
1/2 tablespoon of olive oil
1/2 teaspoon of thyme
1/2 teaspoon of garlic powder
Sea salt and pepper to taste (1/4 teaspoon of salt for me)
Ingredients - Sweet potatoes:
1 medium-sized sweet potato, cut in 1x1 inch (or 2x2 cm) cubes
1/2 tablespoon of olive oil
1/2 teaspoon of chili powder
1/2 teaspoon of garlic powder
1/4 tsp allspice
Ingredients - Whipped tofu:
400 g extra-firm tofu
60 ml (1/4 cup) of soy milk
1 tablespoon olive oil
1 tablespoon of pickle or caper liquid
1 tablespoon of lemon juice
1 tablespoon of nutritional yeast
3 grams (1/4 cup) of fresh parsley
Sea salt, black pepper and chili flakes to taste
Method:
Pre-heat the oven at 400°F (200°C)
Put the cubed sweet potato in a mixing bowl along with its spices and oil. Toss until well-coated, ensuring they are evenly seasoned. Transfer the sweet potatoes to a baking sheet, spreading them out in a single layer. This allows them to roast evenly and develop a delicious caramelized exterior. Place the baking sheet in the preheated oven and let them roast alone for 15-20 minutes.
Put the radishes in a mixing bowl and toss with its spices and oil. Remove the baking sheet from the oven, toss the sweet potatoes a little and make some space for the radishes on the baking tray. Return the baking sheet in the oven for another 15-20 minutes or until the radishes start to develop some caramelization.
While the vegetables are roasting, let’s turn our attention to the tofu. In a food processor, combine the tofu with the ingredients listed above. Blend until smooth and creamy, resembling the texture of whipped cream. Taste as you go to adjust the seasoning.
Once the radishes and sweet potatoes are roasted to perfection, remove them from the oven and let them cool slightly.
To serve, spread a generous dollop of whipped tofu on a plate. Arrange the roasted radishes and sweet potatoes on top, allowing their vibrant colors to shine through. Add an extra sprinkle of salt, pepper, or even a drizzle of olive oil if desired.
