Eat your greens! I mean… Drink your greens!

Smoothies are here to stay! They are a great option for a nutritious breakfast on the go. It literally takes two minutes to put everything in the blender!

This spinach smoothie is one of my personal favorites. Not only it is delicious and fresh, but it also offers a great way to use fresh baby spinach (I see you big bag of spinach bought at the beginning of the week!) and ripe bananas. I like to keep some ripe bananas (cut in big chunks) in the freezer, to use for smoothies and other cold deliciousness!

In this blog post, I'll share two variations of this smoothie —one featuring protein powder (I use the Vega Sport peanut butter protein powder) and another incorporating equally nutritious hemp seeds.

This is the smoothie that made my mom like the idea of smoothies (with spinach at that!) so if it got the Caribbean mom seal of approval, it must be good!

Super spinach smoothie

Ingredients (protein powder version):

  • 1 to 2 cups of fresh baby spinach

  • 1/2 to 1 frozen banana

  • 1 cup soy milk

  • 1 scoop of vegan protein powder (vanilla or peanut butter works amazingly well)

  • Ice cubes if you like it cold (optional)

Ingredients (hemp seeds version):

  • 1 to 2 cups of fresh baby spinach

  • 1/2 to 1 frozen banana

  • 1 cup soy milk

  • 2 tablespoons of hemp seeds

  • Ice cubes if you like it cold (optional)

Method:

  1. In a blender, add the fresh baby spinach, ripe banana, vegan protein powder (or hemp seeds), soy milk, and ice cubes. Add some water (or more soy milk) if needed. Blend on high speed until the ingredients are well combined and the spinach is completely blended.

  2. If the smoothie is too thick, add more soy milk or water until the desired consistency is reached.

  3. Pour the smoothie into a tall glass and enjoy it immediately!
